Pumpkin Spice Zucchini Muffins
These healthy pumpkin spice zucchini muffins are the perfect fall treat when you're craving something pumpkin spice, but don't want all of the refined sugar and flour. They are loaded with healthy fats, protein, and fiber, and are so tasty you would never know they're guilt free. Happing baking!
Ingredients
- 2 cups Rolled Oats
- 1/3 cup flax seeds
- 2 eggs
- 1/4 cup organic full fat Greek yogurt
- 1/4 cup honey
- 1/4 cup maple syrup
- 1 tsp cinnamon
- 1 tsp pumpkin pie spice
- 1/2 tsp baking soda
- 1 1/2 tsp baking powder
- 1/2 tsp vanilla
- 1/2 tsp ground sea salt plus more for the top
- 1 cup grated zucchini
- 1 cup mix-ins (chocolate chips, walnuts, etc) optional
Instructions
- Preheat oven to 400 degrees F
- Add oats to blender and blend into flour
- Add remaining ingredients except for zucchini and optional mix-ins to blender and blend until smooth
- Fold in zucchini and any other mix-ins
- Grease muffin tins with grass fed butter or ghee
- Sprinkle a little bit of sea salt on the top of each muffin
- Bake in the oven until a toothpick comes out clean (about 15 mins)
- Allow to cool slightly, serve, and enjoy!
