Pear Arugula Salad

This salad is the perfect addition to your recipe rotation this fall. I love to make it for a quick balanced lunch or as an addition to any dinner. The flavors blend so perfectly AND it is such a great way to get more vegetables and healthy fats into your diet.

Ingredients
  

  • 2 Cups Organic Arugula
  • 1/3 cup thinly sliced Red Onion
  • 1/2-1 Organic Pear cored and sliced thin
  • 1/3 Cup walnuts
  • 1/4 cup Goat Cheese
  • 1/4 cup microgreens optional
  • freshly ground black pepper to taste

Salad Dressing

  • 1 tbsp chopped shallot
  • 1-2 garlic cloves
  • 1/4 cup extra virgin olive oil
  • 1 tbsp maple syrup optional
  • 2 tbsp white wine vinegar
  • juice from 1/2 of a lemon
  • 1/2 tsp ground sea salt

Instructions
 

  • Chop the onion and pear into thin slices.
  • Then build your salad starting with the arugula (and micro greens), then add the pear and onion, then the walnuts, and goat cheese.
  • Blend together all of the the salad dressing ingredients in a food processor for 30 seconds or until shallots are minced and ingredients are combined.
  • Pour desired amount of dressing onto the salad and enjoy!
