Pear Arugula Salad
This salad is the perfect addition to your recipe rotation this fall. I love to make it for a quick balanced lunch or as an addition to any dinner. The flavors blend so perfectly AND it is such a great way to get more vegetables and healthy fats into your diet.
Servings 2
Ingredients
- 2 Cups Organic Arugula
- 1/3 cup thinly sliced Red Onion
- 1/2-1 Organic Pear cored and sliced thin
- 1/3 Cup walnuts
- 1/4 cup Goat Cheese
- 1/4 cup microgreens optional
- freshly ground black pepper to taste
Salad Dressing
- 1 tbsp chopped shallot
- 1-2 garlic cloves
- 1/4 cup extra virgin olive oil
- 1 tbsp maple syrup optional
- 2 tbsp white wine vinegar
- juice from 1/2 of a lemon
- 1/2 tsp ground sea salt
Instructions
- Chop the onion and pear into thin slices.
- Then build your salad starting with the arugula (and micro greens), then add the pear and onion, then the walnuts, and goat cheese.
- Blend together all of the the salad dressing ingredients in a food processor for 30 seconds or until shallots are minced and ingredients are combined.
- Pour desired amount of dressing onto the salad and enjoy!
