Pear Arugula Salad
This salad is the perfect addition to your recipe rotation this fall. I love to make it for a quick balanced lunch or as an addition to any dinner. The flavors blend so perfectly AND it is such a great way to get more vegetables and healthy fats into your diet.
- 2 Cups Organic Arugula
- 1/3 cup thinly sliced Red Onion
- 1/2-1 Organic Pear cored and sliced thin
- 1/3 Cup walnuts
- 1/4 cup Goat Cheese
- 1/4 cup microgreens optional
- freshly ground black pepper to taste
Salad Dressing
- 1 tbsp chopped shallot
- 1-2 garlic cloves
- 1/4 cup extra virgin olive oil
- 1 tbsp maple syrup optional
- 2 tbsp white wine vinegar
- juice from 1/2 of a lemon
- 1/2 tsp ground sea salt
Chop the onion and pear into thin slices.
Then build your salad starting with the arugula (and micro greens), then add the pear and onion, then the walnuts, and goat cheese.
Blend together all of the the salad dressing ingredients in a food processor for 30 seconds or until shallots are minced and ingredients are combined.
Pour desired amount of dressing onto the salad and enjoy!
